Description

A festive and easy dessert recipe inspired by the classic Shamrock Shake, perfect for St. Patrick’s Day.


Ingredients

  • 1 (3.4 oz) box instant vanilla pudding mix
  • 1 ¼ cups cold milk
  • ½ teaspoon mint extract
  • 35 drops green food coloring (adjust to desired shade)
  • 1 (8 oz) tub Cool Whip, thawed
  • 1 ½ cups mini marshmallows
  • ½ cup mint chocolate chips or chopped Andes mints
  • Whipped cream, for topping
  • Extra mini chocolate chips, for garnish
  • Green sprinkles or sugar pearls (optional, for decoration)
  • Maraschino cherries (optional garnish)

Instructions

  1. In a medium mixing bowl, whisk together the instant vanilla pudding mix and cold milk. Whisk continuously for about 1–2 minutes, until the mixture thickens and becomes smooth. The pudding should begin setting quickly — this creates the structure for your fluff.
  2. Stir in the mint extract. Add 3–5 drops of green food coloring and whisk until evenly combined. Adjust the color as needed to achieve a vibrant mint-green shade similar to a Shamrock Shake.
  3. Gently fold the thawed Cool Whip into the pudding mixture using a spatula. Fold carefully rather than stirring to maintain a light, airy texture. Continue folding until fully combined and fluffy.
  4. Fold in the mini marshmallows and mint chocolate chips (or chopped Andes mints). Make sure they are evenly distributed throughout the mixture for balanced flavor and texture in every bite.
  5. Cover the bowl and refrigerate for at least 1 hour. This allows the flavors to blend and the mixture to thicken further while the marshmallows soften slightly.
  6. Spoon the chilled fluff into a clear serving bowl or individual dessert cups. Top generously with whipped cream. Garnish with extra mini chocolate chips, green sprinkles, and a maraschino cherry if desired. Serve cold.
