Description

A delicious twist on traditional pancakes, these Scrambled Pancake Bites are fluffy and easy to make, perfect for breakfast!


Ingredients

  • 1 1/2 cups pancake mix
  • 2 large eggs
  • 1 cup milk
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 2 tablespoons unsalted butter
  • Warm maple syrup, for serving

Instructions

  1. In a mixing bowl, whisk together pancake mix, eggs, milk, cinnamon, and nutmeg until the mixture is smooth and no lumps remain.
  2. Add 1 tablespoon unsalted butter to a large nonstick skillet and melt over medium heat until bubbling.
  3. Pour the batter into the skillet, spreading it to an even layer.
  4. As the edges begin to set, use a spatula to gently scramble and separate the batter into small bites, similar to scrambled eggs.
  5. Continue to cook, stirring gently until pancake bites are just set and fluffy, about 3 to 4 minutes.
  6. Transfer cooked pancake bites to serving plates. If preparing in batches, add the remaining butter to the pan as needed.
  7. Serve immediately with a generous drizzle of warm maple syrup.

Notes

  • Make sure not to overcook the bites to keep them fluffy.
  • Feel free to add chocolate chips or blueberries for extra flavor.
