A delicious twist on traditional pancakes, these Scrambled Pancake Bites are fluffy and easy to make, perfect for breakfast!
Ingredients

- 1 1/2 cups pancake mix
- 2 large eggs
- 1 cup milk
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 2 tablespoons unsalted butter
- Warm maple syrup, for serving
Instructions
- In a mixing bowl, whisk together pancake mix, eggs, milk, cinnamon, and nutmeg until the mixture is smooth and no lumps remain.
- Add 1 tablespoon unsalted butter to a large nonstick skillet and melt over medium heat until bubbling.
- Pour the batter into the skillet, spreading it to an even layer.
- As the edges begin to set, use a spatula to gently scramble and separate the batter into small bites, similar to scrambled eggs.
- Continue to cook, stirring gently until pancake bites are just set and fluffy, about 3 to 4 minutes.
- Transfer cooked pancake bites to serving plates. If preparing in batches, add the remaining butter to the pan as needed.
- Serve immediately with a generous drizzle of warm maple syrup.
Notes
- Make sure not to overcook the bites to keep them fluffy.
- Feel free to add chocolate chips or blueberries for extra flavor.
- These can also be made ahead of time and reheated in a skillet.
