- 6 strips beef bacon (cooked)
- 4 medium jalapenos
- 1/2 tsp onion powder
- 1/4 tsp black pepper
- 1/2 tsp garlic salt
- 1 tbsp olive oil
- 4 slices Texas toast (or your favorite thick-cut bread)
- 4 tbsp unsalted butter (for spreading on the bread)
- 1 cup mild cheddar cheese, shredded
- 4 oz cream cheese, softened
Instructions
- Roast the jalapenos by preheating the oven to 400°F (200°C), coating with olive oil, and roasting for 10-12 minutes until blistered.
- Cook the beef bacon in a skillet until crispy, then crumble and set aside.
- Prepare the cheese filling by combining softened cream cheese, shredded cheddar, onion powder, garlic salt, black pepper, chopped jalapenos, and crumbled bacon in a bowl.
- Butter one side of each slice of Texas toast.
- Assemble the sandwich with cheese mixture on non-buttered side, topping with another slice with butter side out.
- Grill the sandwiches in a skillet over medium heat for 3-4 minutes on each side until golden brown.
- Slice the sandwiches in half and serve immediately.
Notes
- For extra heat, leave some seeds in the jalapenos.
- Pair with pickles, chips, or a fresh salad.
