Instructions
- Preheat your oven to 375°F and prepare a non-stick muffin pan.
- For the crumb topping, mix sugar and flour in a medium bowl, then cut in butter until coarse crumbs form.
- In another bowl, blend cream cheese, sugar, and vanilla until smooth; set aside.
- In a large bowl, whisk together flour, sugar, baking powder, and salt.
- In a separate bowl, whisk together egg, oil, buttermilk, cocoa powder, and food coloring.
- Combine wet and dry ingredients until just moistened; fold in the cream cheese mixture gently.
- Fill muffin cups two-thirds full and sprinkle with crumb topping.
- Bake for 17 to 19 minutes or until a toothpick comes out clean.
