Ingredients
- 1 1/4 cups all-purpose flour
- 1/2 cup granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt (or to taste)
- 1 large egg
- 1/2 cup canola or vegetable oil
- 1/3 cup buttermilk or 1/3 cup milk combined with 1 teaspoon lemon juice
- 2 tablespoons natural unsweetened cocoa powder
- 2 teaspoons red liquid food coloring
- 1/2 cup mini chocolate chips
Instructions
- Preheat the oven to 375F (or 425F for later baking instructions).
- Line the mini muffin pans with cupcake liners.
- If using milk instead of buttermilk, mix 1/3 cup of milk with 1 tsp of lemon juice and let it sit.
- In a large bowl, combine the dry ingredients: flour, granulated sugar, baking powder, and salt, and whisk until well combined.
- In a separate bowl, add the wet ingredients: egg, oil, buttermilk (or milk and lemon juice), cocoa powder, and red food coloring, and mix well.
- Combine wet ingredients with dry ingredients until just moist, avoiding overmixing.
- Gently fold in the mini chocolate chips.
- Fill muffin cups almost to the top, smoothing the batter in the tins.
- Bake at 425F for about 20 minutes or until a toothpick inserted comes out clean.
