Description

Rainbow Sprinkle Protein Bagels are a fun and healthy treat that combines the goodness of protein with a colorful touch of sprinkles for an enjoyable snack.

Ingredients

Scale
  • 2 cups white whole wheat flour
  • 1 cup nonfat Greek yogurt
  • 1 scoop vanilla whey protein powder
  • 2 tablespoons granulated sweetener
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/3 cup rainbow sprinkles
  • 1 egg
  • 2 tablespoons rainbow sprinkles (for topping)

Instructions

  1. Prepare baking station: Preheat oven to 350°F and line a baking sheet with parchment paper.
  2. Mix dry ingredients: In a large mixing bowl, combine flour, protein powder, sweetener, baking powder, baking soda, and salt. Mix thoroughly until well incorporated.
  3. Incorporate wet ingredients: Add Greek yogurt and vanilla extract to the dry mixture. Stir with a spatula or hands until a soft dough forms.
  4. Fold in sprinkles: Gently fold 1/3 cup rainbow sprinkles into the dough, distributing evenly throughout.
  5. Portion dough: Lightly flour a work surface and turn dough out. Divide into 6 equal pieces.
  6. Shape bagels: Roll each piece into a log and shape into a bagel ring by pinching the ends to seal.
  7. Arrange on baking sheet: Place shaped bagels on the prepared baking sheet.
  8. Apply egg wash and garnish: Beat egg and brush over the tops of bagels. Sprinkle additional rainbow sprinkles on top of each bagel.
  9. Bake bagels: Bake for 16 to 18 minutes, or until bagels are lightly golden and cooked through.
  10. Cool before serving: Allow bagels to cool on a wire rack before serving.

Notes

  • Store leftover bagels in an airtight container for up to 3 days.
  • For a vegan option, substitute Greek yogurt with a plant-based yogurt and the egg wash with almond milk.
