Ingredients

Scale
  • 4 cups shredded purple cabbage
  • 1 large mango, peeled and diced
  • ⅓ cup dried cranberries
  • ¼ cup sliced green onions
  • ¼ cup chopped cilantro (optional but adds great flavor)
  • 2 tbsp olive oil
  • 1 tbsp apple cider vinegar
  • 1 tbsp lime juice
  • 1 tsp honey
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine cabbage, mango, cranberries, green onions, and cilantro.
  2. In a small jar or bowl, whisk together olive oil, vinegar, lime juice, honey, salt, and pepper.
  3. Pour the dressing over the slaw and toss well to coat.
  4. Let it chill for at least 15 minutes before serving to let the flavors meld.

Notes

  • For a vegan version, omit honey or substitute with agave syrup.
  • This slaw can be made ahead of time; just give it a good toss before serving.
  • Feel free to add other ingredients like bell peppers or jalapeños for an extra kick.
