- 1.2 kg pork loin
- 1 tablespoon chili powder
- 2 teaspoons garlic salt
- 330 ml Coca-Cola
- 240 ml BBQ sauce
- 4 medium sweet potatoes
Instructions
- Rub pork loin evenly with chili powder and garlic salt, ensuring all sides are coated.
- Place pork loin in a slow cooker and pour Coca-Cola over the top until just covered. Set to low and cook for 8 hours until fork-tender.
- Wash and scrub sweet potatoes thoroughly. Wrap each individually in foil and place on a baking tray. Bake at 200°C for 1 hour or until soft.
- Remove the pork from the slow cooker, reserving 1 tablespoon of the liquid. Return pork to the cooker and shred using two forks. Add BBQ sauce, mixing to combine. Keep on warm setting until serving.
- Slice each baked sweet potato lengthwise. Fluff with a fork and generously fill with pulled pork. Drizzle with additional BBQ sauce if desired before serving.
