Description

Protein Cinnamon Berry Doughnuts are a healthy and delicious treat packed with protein and bursting with berry flavor.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup vanilla protein powder (whey or plant-based)
  • 1/2 cup granulated sugar or coconut sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 large eggs
  • 2/3 cup unsweetened Greek yogurt
  • 1/4 cup unsweetened applesauce
  • 1/4 cup milk of choice
  • 2 tablespoons melted coconut oil or unsalted butter
  • 1 teaspoon vanilla extract
  • 3/4 cup fresh or frozen mixed berries (blueberries, raspberries, or chopped strawberries)
  • 2 tablespoons granulated sugar (for topping, optional)
  • 1/2 teaspoon ground cinnamon (for topping, optional)
  • 1 tablespoon melted butter (for brushing, optional)

Instructions

  1. Preheat oven to 350°F (175°C) and lightly grease a nonstick doughnut pan.
  2. In a large bowl, whisk together the dry ingredients until evenly combined.
  3. In a medium bowl, beat the eggs and add the wet ingredients; mix until smooth.
  4. Pour the wet mixture over the dry ingredients and gently stir until just combined.
  5. Fold in the mixed berries carefully to distribute evenly.
  6. Spoon the batter into the prepared doughnut pan, filling each cavity about three-quarters full.
  7. Bake for 12 to 15 minutes, until a toothpick comes out clean.
  8. Allow the doughnuts to cool for 5 minutes, then transfer to a wire rack.
  9. If desired, brush with melted butter and sprinkle or dip in the cinnamon sugar mixture.
  10. Serve warm or at room temperature; store leftovers in an airtight container for up to 2 days.
