Description

A protein-packed take on the classic banana bread that is healthy and delicious.


Ingredients

  • 2 large ripe bananas
  • 4 large eggs
  • 1 cup low fat cottage cheese
  • 2 teaspoons vanilla extract
  • 1 and 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda

Instructions

  1. Preheat oven to 350°F. Grease or line a loaf pan with parchment paper to prevent sticking.
  2. Blend bananas, eggs, low fat cottage cheese, and vanilla extract using a high-speed blender or immersion blender until the mixture is smooth and cottage cheese is fully incorporated. Transfer to a large mixing bowl.
  3. Whisk together all-purpose flour, granulated sugar, baking powder, and baking soda in a separate bowl until evenly distributed.
  4. Add the dry ingredients to the blended wet mixture. Gently fold together with a flat spatula until just combined. Do not overmix for a tender crumb.
  5. Pour batter into prepared pan, smoothing the top. Bake at 350°F for approximately 55 minutes. For the last 20 minutes, loosely cover the loaf with aluminum foil to prevent over-browning.
  6. Remove from oven and let banana bread cool completely in the pan. Once cool, remove from pan, slice into 8 servings, and serve.
