A delightful dessert combining the sweetness of pineapple with a buttery graham cracker crust, topped with whipped cream.

- 175 g graham cracker crumbs
- 75 g unsalted butter, melted
- 40 g granulated sugar
- 115 g cream cheese, softened
- 115 g unsalted butter, softened
- 625–750 g icing sugar
- 5 ml vanilla extract
- 120 g fresh golden pineapple, finely diced and well drained
- 250 ml whipping cream
- 5 ml vanilla extract
- 24 g icing sugar
Instructions
- Create a small well in the centre of the graham crumbs in a medium mixing bowl. Add granulated sugar to the well and pour over the melted butter.
- Allow the mixture to stand for 2 minutes, then mix thoroughly to combine.
- Firmly press the crumb mixture into the base of a lightly greased and parchment-lined 23 x 23 cm baking pan.
- Cream the softened butter and cream cheese in a stand mixer or with a hand beater until smooth.
- Add the vanilla extract and mix until incorporated.
- Gradually blend in the icing sugar until a very stiff frosting forms.
- Gently fold in the drained, finely diced pineapple with a spatula.
- Evenly spread the pineapple frosting over the prepared crumb base.
- Chill in the refrigerator for several hours or preferably overnight to set.
- Whip the cream with vanilla extract and icing sugar until stiff peaks form.
- Spread the whipped cream evenly atop the set pineapple frosting layer.
- Store chilled until ready. Cut into squares and serve cold.

- Ensure the pineapple is well drained to avoid excess moisture in the frosting.
- For best results, refrigerate overnight to allow flavors to meld.
