Description

A delightful dessert combining the sweetness of pineapple with a buttery graham cracker crust, topped with whipped cream.


Ingredients

  • 175 g graham cracker crumbs
  • 75 g unsalted butter, melted
  • 40 g granulated sugar
  • 115 g cream cheese, softened
  • 115 g unsalted butter, softened
  • 625750 g icing sugar
  • 5 ml vanilla extract
  • 120 g fresh golden pineapple, finely diced and well drained
  • 250 ml whipping cream
  • 5 ml vanilla extract
  • 24 g icing sugar

Instructions

  1. Create a small well in the centre of the graham crumbs in a medium mixing bowl. Add granulated sugar to the well and pour over the melted butter.
  2. Allow the mixture to stand for 2 minutes, then mix thoroughly to combine.
  3. Firmly press the crumb mixture into the base of a lightly greased and parchment-lined 23 x 23 cm baking pan.
  4. Cream the softened butter and cream cheese in a stand mixer or with a hand beater until smooth.
  5. Add the vanilla extract and mix until incorporated.
  6. Gradually blend in the icing sugar until a very stiff frosting forms.
  7. Gently fold in the drained, finely diced pineapple with a spatula.
  8. Evenly spread the pineapple frosting over the prepared crumb base.
  9. Chill in the refrigerator for several hours or preferably overnight to set.
  10. Whip the cream with vanilla extract and icing sugar until stiff peaks form.
  11. Spread the whipped cream evenly atop the set pineapple frosting layer.
  12. Store chilled until ready. Cut into squares and serve cold.
