Description

Delicious pineapple bacon burger buns that combine smoky bacon, juicy beef patties, and fresh pineapple for a unique and tasty treat.


Ingredients

  • 450 grams lean ground beef (93% lean, 7% fat)
  • 2 tablespoons smoky barbecue sauce (mixed into beef)
  • 0.5 teaspoon salt
  • 0.25 teaspoon freshly ground black pepper
  • 8 slices smoked bacon, uncooked
  • 4 slices fresh pineapple, 1.25 cm thick, core removed
  • 2 tablespoons smoky barbecue sauce (for brushing bacon)
  • 4 brioche-style burger buns

Instructions

  1. Preheat oven to 200°C. Line a large rimmed baking sheet with aluminium foil and place an oven-safe wire rack on top.
  2. In a large bowl, combine ground beef, 2 tablespoons barbecue sauce, salt, and black pepper. Mix gently to avoid overworking the meat.
  3. Divide the beef mixture into 4 equal portions, shaping each into a patty approximately 9 cm in diameter and 1.25 cm thick.
  4. On a tray lined with parchment or a clean board, arrange 2 bacon slices in a cross. Place 1 beef patty at the centre, top with a pineapple slice, and fold bacon ends over to wrap. Secure with a toothpick. Repeat for all servings.
  5. Arrange assembled patties on prepared baking rack. Bake for 15 minutes.
  6. Remove tray from oven. Brush exposed bacon with remaining 2 tablespoons barbecue sauce. Return to oven and cook an additional 10–15 minutes, until bacon is crisp and internal temperature reaches 71°C for well-done.
  7. While burgers are finishing, toast burger buns as desired.
  8. Let burgers rest 5 minutes on the tray. Serve each wrapped patty on a toasted bun. Add lettuce or preferred toppings if desired.
