Description

Peanut Butter Chocolate Greek Yogurt Bark is a delicious and healthy treat made with Greek yogurt, peanut butter, and dark chocolate.


Ingredients

Scale
  • 1 c plain Greek yogurt, whole milk/full fat
  • 3/4 c peanut butter
  • 1/4 c vanilla protein powder
  • 12 T maple syrup or honey
  • 1/4 tsp vanilla extract
  • 1 c dark chocolate chips
  • flaked sea salt, optional

Instructions

  1. Stir together the yogurt, peanut butter, protein powder, sweetener, and vanilla until smooth and creamy.
  2. Spread the mixture evenly on a parchment lined quarter sheet pan.
  3. Spread the mixture to a thickness of between 1/4 inch and 1/2 inch.
  4. Melt the dark chocolate chips in the microwave in 30 second increments, stirring in between.
  5. Once melted, spread the chocolate evenly over the peanut butter yogurt mixture.
  6. Transfer to the freezer for at least 2-3 hours.
  7. Once frozen, sprinkle with flaked sea salt, cut into pieces or break it up and enjoy!

Notes

  • Using an offset spatula helps to spread the mixture evenly.
  • If a quarter sheet pan is not available, a 9×13 inch baking pan can be used.
  • Store any leftovers in the freezer for a refreshing treat later.
