Description

Ingredients

  • 6 large eggs
  • 2 cups skim milk or unsweetened almond milk
  • 1/2 cup natural creamy peanut butter
  • 1/4 cup unsweetened cocoa powder
  • 1/3 cup light brown sugar or coconut sugar
  • 1/2 cup plain Greek yogurt (2% or higher)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1/3 cup dark chocolate chips
  • 2 tablespoons chopped roasted peanuts
  • Maple syrup or honey for serving

Instructions

  1. Preheat the oven to 350°F. Grease a 9×13-inch baking dish and spread bread cubes evenly in the prepared dish.
  2. In a large bowl, whisk together eggs, milk, peanut butter, cocoa powder, brown sugar, Greek yogurt, vanilla extract, and salt until smooth and well combined.
  3. Pour the custard mixture evenly over the bread cubes. Gently press the bread down to ensure all pieces soak up the custard. Let sit for 10 minutes to allow bread to absorb the liquid.
  4. Sprinkle chocolate chips and chopped peanuts evenly over the top if using.
  5. Bake uncovered for 30 to 35 minutes, or until the custard is set and the top is puffed and lightly crisp.
  6. Let cool for 5 minutes before slicing. Serve warm, drizzled with maple syrup or honey if desired.
