Description

A delightful and sweet Peach Pecan Bread recipe that combines the flavors of ripe peaches and crunchy pecans, perfect for a tasty breakfast or snack.


Ingredients

  • 1 cup pecans, coarsely chopped
  • 2 large peaches, peeled, pitted, and cut into chunks
  • 2/3 cup granulated sugar
  • 1/4 cup milk
  • 1/4 cup canola oil
  • 2 large eggs
  • 2 cups all purpose flour
  • 1 teaspoon salt
  • 2 teaspoons baking powder
  • Glaze: 1/2 cup powdered sugar
  • Glaze: 2 tablespoons milk

Instructions

  1. Peel and cut up the peaches. Set aside and chop the pecans.
  2. In a large bowl, stir together the sugar, milk, oil, and eggs. Now mix in the flour, salt, and baking powder.
  3. Note: The batter will be a bit dry.
  4. Fold in the peaches and pecans until thoroughly blended.
  5. Spoon the batter into a standard 9×5″ loaf pan or two smaller size half pans.
  6. Bake at 350°F for 50-60 minutes, or until a knife inserted into the loaf comes out clean. Allow it to cool for 20 minutes.
  7. In a small bowl, whisk together the milk and powdered sugar. Drizzle over the cooled bread just before serving.
