- 1 cup pecans, coarsely chopped
- 2 large peaches, peeled, pitted, and cut into chunks
- 2/3 cup granulated sugar
- 1/4 cup milk
- 1/4 cup canola oil
- 2 large eggs
- 2 cups all purpose flour
- 1 teaspoon salt
- 2 teaspoons baking powder
- Glaze: 1/2 cup powdered sugar
- Glaze: 2 tablespoons milk
Instructions
- Peel and cut up the peaches. Set aside and chop the pecans.
- In a large bowl, stir together the sugar, milk, oil, and eggs. Now mix in the flour, salt, and baking powder.
- Note: The batter will be a bit dry.
- Fold in the peaches and pecans until thoroughly blended.
- Spoon the batter into a standard 9×5″ loaf pan or two smaller size half pans.
- Bake at 350°F for 50-60 minutes, or until a knife inserted into the loaf comes out clean. Allow it to cool for 20 minutes.
- In a small bowl, whisk together the milk and powdered sugar. Drizzle over the cooled bread just before serving.
