A refreshing salad combining the sweetness of peaches, creaminess of burrata, and peppery arugula.
Ingredients

- 4 cups fresh arugula
- 2 ripe peaches, thinly sliced
- 8 oz burrata cheese (2 small balls or 1 large)
- 1/4 cup toasted pecans or walnuts (optional)
- 1–2 tbsp extra virgin olive oil
- 1 tbsp balsamic glaze
- Salt and freshly cracked black pepper, to taste
- Optional: fresh basil leaves for garnish
Instructions
- Rinse and dry the arugula and place it in a large serving bowl or platter.
- Slice the peaches thinly and layer them evenly over the arugula.
- Gently tear or place the burrata cheese in the center or spread around the salad.
- Sprinkle with toasted nuts if using, and a few fresh basil leaves for added flavor.
- Drizzle with olive oil and balsamic glaze.
- Finish with a light sprinkle of salt and freshly cracked black pepper to taste.
- Serve immediately as a fresh starter or light entrée.
