Description

A refreshing salad combining the sweetness of peaches, creaminess of burrata, and peppery arugula.


Ingredients

Scale
  • 4 cups fresh arugula
  • 2 ripe peaches, thinly sliced
  • 8 oz burrata cheese (2 small balls or 1 large)
  • 1/4 cup toasted pecans or walnuts (optional)
  • 12 tbsp extra virgin olive oil
  • 1 tbsp balsamic glaze
  • Salt and freshly cracked black pepper, to taste
  • Optional: fresh basil leaves for garnish

Instructions

  1. Rinse and dry the arugula and place it in a large serving bowl or platter.
  2. Slice the peaches thinly and layer them evenly over the arugula.
  3. Gently tear or place the burrata cheese in the center or spread around the salad.
  4. Sprinkle with toasted nuts if using, and a few fresh basil leaves for added flavor.
  5. Drizzle with olive oil and balsamic glaze.
  6. Finish with a light sprinkle of salt and freshly cracked black pepper to taste.
  7. Serve immediately as a fresh starter or light entrée.
