Description

A light and refreshing cake that combines the flavors of vanilla and orange reminiscent of a classic creamsicle.


Ingredients

Scale
  • 15.25 ounces vanilla cake mix
  • 3 eggs (room temperature)
  • 1 cup milk or vanilla almondmilk
  • ½ cup vegetable oil
  • 1 tablespoon orange zest
  • 3.4 ounces orange JELLO
  • 1 ¼ cup boiling water
  • ⅓ cup fresh squeezed orange juice
  • 15 ounces can of mandarin oranges (do not drain)
  • 3.5 ounces vanilla instant pudding mix
  • 8 ounces Cool Whip

Instructions

  1. Prepare cake mix according to package directions, for a 9 x 13 inch baking pan, substituting vanilla almondmilk (or regular milk) for the water and adding the orange zest.
  2. Bake using package directions. Remove from oven and let cool on a rack for approximately 10 minutes.
  3. Use a skewer to poke holes in the top of the cake.
  4. Place orange JELLO mix in a heat proof bowl and slowly add boiling water. Whisk until the JELLO has completely dissolved.
  5. Stir in fresh orange juice.
  6. Carefully and slowly pour the JELLO mixture over the top of the cake. Refrigerate for at least 3 hours.
  7. Beat mandarins and pudding mix together until combined.
  8. Gently fold in the Cool Whip or whipped cream until incorporated.
  9. Spread on cooled cake.
  10. Refrigerate for at least 30 minutes before serving.

Notes

  • Allow the cake to cool completely before adding the frosting.
  • For a more intense orange flavor, add more orange zest to the cake batter.
