Ingredients

Scale
  • 34 lb chuck roast
  • ½ (12 oz) jar pepperoncini peppers
  • ½ (12 oz) jar pepperoncini juice
  • ¼ cup unsalted butter, cubed
  • 1 (1 oz) packet au jus gravy mix
  • 1 (0.4 oz) packet buttermilk ranch dressing mix

Instructions

  1. Optional Step: Sear the roast in a skillet with 2–3 tablespoons of oil over medium-high heat for 3–4 minutes per side, until browned.
  2. Place the chuck roast in a slow cooker.
  3. Top with pepperoncini peppers, their juice, cubed butter, au jus gravy mix, and ranch seasoning.
  4. Cover and cook on LOW for 8–10 hours, or until the roast is fall-apart tender.
  5. Carefully remove the roast and let rest, loosely covered with foil, for 10 minutes.
  6. Shred the meat with two forks, return it to the slow cooker, and stir to soak up the juices. Let it sit for 15–20 more minutes for extra flavor.
  7. Serve hot with mashed potatoes, rice, or as a sandwich filling.

Notes

  • For extra heat, consider adding additional pepperoncini or hot peppers.
  • Can be prepared a day in advance for better flavor, just reheat before serving.
