- 450g potatoes, peeled and diced
- 225g chorizo, casings removed
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 1 teaspoon ground cumin (optional)
- Salt, to taste
- Freshly ground black pepper, to taste
- Fresh cilantro, chopped (for garnish)
- Lime wedges (for serving)
Instructions
- Place diced potatoes in a pot, cover with water, and bring to a boil. Cook for 10–15 minutes until tender. Drain well and set aside.
- In a large skillet over medium heat, crumble and cook chorizo for 5–7 minutes until browned and fat is rendered. Add diced onion and sauté until translucent, about 3–4 minutes.
- Stir in minced garlic and cumin; cook for 1 minute until aromatic.
- Fold cooked potatoes into the chorizo mixture, gently mixing to coat the potatoes in the rendered oil.
- Season with salt and freshly ground black pepper. Continue cooking for 5–7 minutes, allowing edges to crisp lightly.
- Transfer to a platter. Garnish with chopped fresh cilantro and serve immediately with lime wedges.
