Description

A flavorful dish featuring grilled salmon marinated in Mediterranean herbs served over lemon-infused jasmine rice.


Ingredients

  • 1 lb skinless, boneless salmon fillet, cut into cubes
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt, to taste
  • Pepper, to taste
  • Juice of 1 lemon
  • Fresh parsley, chopped, for garnish
  • 1 cup jasmine rice
  • 2 cups vegetable or chicken broth
  • Zest of 1 lemon
  • Juice of 1 lemon
  • 1 tablespoon olive oil
  • Salt, to taste

Instructions

  1. Combine 2 tablespoons olive oil, minced garlic, dried oregano, dried thyme, paprika, salt, pepper, and lemon juice in a bowl. Mix thoroughly.
  2. Add salmon cubes to the marinade and toss until evenly coated. Refrigerate and marinate for at least 15 minutes.
  3. Heat a grill pan or skillet over medium-high heat until hot.
  4. Place marinated salmon cubes on the hot pan and cook for 4 to 5 minutes per side until fully cooked and grill marks appear.
  5. Remove salmon from heat and sprinkle with chopped fresh parsley.
  6. Rinse jasmine rice under cold water until water runs clear to remove excess starch.
  7. In a medium saucepan, combine rinsed rice, broth, lemon zest, lemon juice, 1 tablespoon olive oil, and salt. Bring to a boil.
  8. Reduce heat to low, cover, and cook for 15 to 20 minutes until rice is tender and liquid absorbed.
  9. Fluff rice with a fork before serving.
  10. Serve lemon rice topped with grilled salmon cubes. Garnish with additional parsley and lemon wedges as desired.

Notes

  • For a spicy kick, add red pepper flakes to the marinade.
  • Allow salmon to marinate for longer for deeper flavor.
  • Use brown rice for a healthier alternative, adjusting the cooking time based on the type of rice.
