Description

A refreshing Mediterranean Greek Salad featuring ripe tomatoes, crisp cucumbers, and creamy feta cheese, perfect for summer.


Ingredients

  • 3 medium ripe tomatoes, cut into wedges
  • 1 cucumber, peeled and sliced into half moons
  • 1/2 red onion, thinly sliced
  • 1 green bell pepper, sliced
  • 1/2 cup Kalamata olives, pitted
  • 3/4 cup crumbled feta cheese
  • 1/4 cup extra virgin olive oil
  • 1 tablespoon red wine vinegar
  • 1 teaspoon dried oregano
  • Sea salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Chop the tomatoes, cucumber, red onion, and bell pepper and place them in a large mixing bowl.
  2. Add the Kalamata olives to the bowl with the chopped vegetables.
  3. In a small bowl, whisk together the olive oil, red wine vinegar, oregano, salt, and black pepper.
  4. Pour the dressing over the vegetables and gently toss until everything is evenly coated.
  5. Top the salad with crumbled feta cheese and serve immediately or chill slightly before serving.
