A delicious and healthy Mediterranean Chicken Zucchini Bake that is packed with flavors and easy to prepare.
Ingredients

- 4 boneless, skinless chicken breasts
- 2 large zucchinis, sliced
- 1 cup cherry tomatoes, halved
- ½ cup black olives, sliced
- ½ cup sun-dried tomatoes, chopped
- ½ cup crumbled feta cheese
- 1 tbsp olive oil
- 1 tsp dried oregano
- 1 tsp dried basil
- ½ tsp garlic powder
- Salt & pepper, to taste
Instructions
- Preheat oven to 375°F (190°C).
- Season chicken breasts with olive oil and spices.
- In a greased baking dish, arrange seasoned chicken at the center; surround with zucchini slices and add tomatoes and olives.
- Bake uncovered for 30–35 minutes until the chicken reaches an internal temperature of 165°F (74°C). Top with feta during the last few minutes if desired.
- Serve hot, garnished with fresh parsley.
Notes
- Ensure the chicken is fully cooked by checking the internal temperature.
- Feel free to add other vegetables for a more colorful dish.
- This dish can be stored in the refrigerator for up to 3 days.
