Description

A delicious and healthy Mediterranean Chicken Zucchini Bake that is packed with flavors and easy to prepare.


Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 2 large zucchinis, sliced
  • 1 cup cherry tomatoes, halved
  • ½ cup black olives, sliced
  • ½ cup sun-dried tomatoes, chopped
  • ½ cup crumbled feta cheese
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • ½ tsp garlic powder
  • Salt & pepper, to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Season chicken breasts with olive oil and spices.
  3. In a greased baking dish, arrange seasoned chicken at the center; surround with zucchini slices and add tomatoes and olives.
  4. Bake uncovered for 30–35 minutes until the chicken reaches an internal temperature of 165°F (74°C). Top with feta during the last few minutes if desired.
  5. Serve hot, garnished with fresh parsley.

  • Ensure the chicken is fully cooked by checking the internal temperature.
  • Feel free to add other vegetables for a more colorful dish.
