Description

Mediterranean Cheese Spinach makes quick and delicious quesadillas filled with feta, mozzarella, and fresh vegetables.


Ingredients

  • 75 grams crumbled feta (about 1/2 cup)
  • 110 grams shredded mozzarella (around 1 cup)
  • 1 medium diced tomato (grape, cherry, or plum work well)
  • 33 grams diced red onion (roughly 1/3 cup)
  • 30 grams chopped fresh spinach (close to 1 cup)
  • 3 large flour tortillas (burrito style, roughly 25 cm each)

Instructions

  1. In a bowl, mix together the diced tomato, red onion, chopped spinach, crumbled feta, and shredded mozzarella. Stir gently until everything is well blended.
  2. Heat a bit of oil in a large flat pan or griddle over medium heat.
  3. Scoop one third of the filling onto one half of each tortilla. Fold the other half over to completely cover the filling.
  4. Put the folded tortillas in the pan and cook each side for 3 to 4 minutes. Press down lightly with a spatula until they’re golden and the cheese melts.
  5. Take the quesadillas out of the pan and cut each one into 4 wedges. Enjoy right away, adding toppings like sour cream, salsa, or pico de gallo if desired.
