A hearty dish featuring juicy meatballs baked with tender potatoes and topped with melted cheddar cheese.

- 1 1/2 pounds ground beef
- 1/2 cup plain breadcrumbs
- 1/4 cup whole milk
- 1 large egg
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon kosher salt, or to taste
- 1/2 teaspoon freshly ground black pepper, or to taste
- 1 tablespoon ketchup (optional)
- 4 medium russet potatoes, peeled and cut into 1/2-inch cubes
- 2 tablespoons olive oil
- 1/2 teaspoon kosher salt, or to taste
- 1/4 teaspoon freshly ground black pepper
- Nonstick cooking spray or unsalted butter, for greasing baking dish
- 1 1/2 cups shredded cheddar cheese
- 1/4 cup chopped fresh parsley (optional)
Instructions
- Preheat oven to 375°F (190°C) and lightly coat a 9×13-inch baking dish with nonstick cooking spray or butter.
- In a large mixing bowl, combine ground beef, breadcrumbs, milk, egg, garlic powder, onion powder, salt, black pepper, and ketchup if using. Mix until just combined.
- Shape mixture into approximately twenty 1 1/2-inch meatballs and set aside on a plate.
- In a separate bowl, toss potato cubes with olive oil, salt, and black pepper until evenly coated.
- Evenly distribute the seasoned potato cubes in the bottom of the prepared baking dish. Place the meatballs on top of the potatoes in a single layer.
- Cover the baking dish tightly with foil and bake in the preheated oven for 40 minutes.
- Remove the foil. Evenly sprinkle the shredded cheddar cheese over the meatballs and potatoes. Return the dish to the oven and bake uncovered for 10–15 minutes until the cheese is melted and bubbly, and the meatballs are cooked through.
- Allow to cool slightly. Sprinkle chopped parsley over the top, if desired, and serve warm.
Notes
- You can use ground turkey or chicken instead of beef for a lighter option.
- Add your favorite spices to the meatball mixture for a flavor boost.
- This dish can be prepared ahead of time and baked when ready to serve.
