Description

Deliciously cheesy mashed potato balls wrapped in crispy bacon.


Ingredients

Scale
  • 2 cups cold mashed potatoes
  • 1 egg
  • Salt, to taste
  • Black pepper, to taste
  • ½ cup dry bread crumbs
  • Cheddar cheese, cut into 1-inch chunks (1 chunk per bomb)
  • Bacon slices (1 slice per bomb)
  • Oil for frying (canola recommended)
  • Sour cream, for dipping

Instructions

  1. Combine the cold mashed potatoes, egg, salt, and pepper in a mixing bowl until evenly incorporated.
  2. Scoop some mashed potato mixture, wrap it around a cheddar cheese chunk, and roll it into a ball.
  3. Roll each potato ball in dry bread crumbs to evenly coat.
  4. Wrap each coated potato ball with a bacon slice. Secure the bacon with a toothpick.
  5. Heat oil to 175°C (350°F). Fry the bombs, 1-2 at a time, until golden brown on all sides.
  6. Drain the fried potato bombs on paper towels. Serve warm with sour cream for dipping.
