- 2 teaspoons garlic (minced)
- 3 tablespoons flour
- 1 ½ cups chicken broth
- ¾ cup heavy cream
- ½ cup Parmesan cheese (grated)
- ½ cup sun-dried tomatoes (drained and chopped)
- 1 teaspoon dried Italian seasoning
- 1 teaspoon lemon zest
- Fresh basil (for garnish)
Instructions
- Brush 1 tablespoon olive oil over each salmon fillet. Sprinkle with Italian seasoning, salt, and pepper.
- In a large skillet, heat 1 tablespoon olive oil over medium-high heat.
- Place salmon fillets in the pan and cook for about 3 minutes per side until golden brown. Reduce heat to medium-low and cook until the salmon is done. Remove and set aside.
- In the same skillet, melt 3 tablespoons butter over medium heat.
- Add minced garlic and cook for 30 seconds until fragrant.
- Stir in 3 tablespoons flour to form a paste.
- Slowly whisk in the chicken broth and let it simmer.
- Stir in heavy cream and Parmesan cheese, whisking until smooth.
- Mix in sun-dried tomatoes, Italian seasoning, and lemon zest. Adjust salt and pepper to taste.
- Nestle the salmon fillets into the sauce.
- Let everything cook together on low heat for 10 minutes.
- Sprinkle with fresh basil and serve warm over pasta, rice, or vegetables.
