- 0.5 cup sun-dried tomatoes
- 1 teaspoon Italian seasoning

- 1 teaspoon salt
- 0.75 cup vegetable broth
- 1 cup coconut milk
- 850 grams canned chickpeas, drained and rinsed
- 1 handful spinach or basil, torn
Instructions
- Heat olive oil in a pan over medium heat. Add minced onion and garlic, and sauté until fragrant and translucent, about 5 minutes.
- Incorporate sun-dried tomatoes, tomato paste, Italian seasoning, red chili flakes, and salt. Sauté for an additional 3 minutes until aromas deepen.
- Pour in vegetable broth and coconut milk, stirring to create a cohesive sauce. Add drained chickpeas and gently combine. Cover and cook for 2 to 3 minutes, allowing chickpeas to heat through.
- Stir in torn spinach or basil just before serving. Serve warm with toasted bread, rice, or pasta if desired.
