A delicious marinated cheese appetizer combined with salami and pickles, perfect for gatherings.

- 8 oz sharp cheddar cheese, cubed
- 8 oz Monterey Jack or mozzarella, cubed
- 4 oz dry salami, sliced into bite-size pieces
- 1 cup mini dill pickles or gherkins, drained
- ½ small red onion, thinly sliced (optional)
- ⅓ cup olive oil
- 2 tablespoons red wine vinegar or white balsamic
- 1 teaspoon Dijon mustard
- 1 clove garlic, minced
- 1 teaspoon Italian seasoning
- ½ teaspoon crushed red pepper flakes (optional)
- Salt & pepper to taste
- 1 tablespoon chopped fresh parsley (or 1 teaspoon dried)
Instructions
- Cube the cheeses, slice the salami, and drain the pickles. Thinly slice the red onion, if using.
- In a small bowl or jar, whisk together the olive oil, vinegar, Dijon mustard, garlic, Italian seasoning, red pepper flakes, salt, pepper, and parsley.
- Place the cheese, salami, pickles, and onion in a large bowl or resealable container.
- Pour the marinade over the ingredients and gently toss to coat evenly.
- Cover and refrigerate for at least 1 hour, or up to 24 hours, stirring occasionally if marinating overnight.
- Serve chilled or at room temperature in a bowl or on skewers for individual servings.
