Margarita Lime Cake Bars are a refreshing dessert featuring a creamy lime filling over a buttery yellow cake crust, topped with powdered sugar and margarita salt.

- 1 box Yellow Cake Mix
- ½ cup Unsalted Butter, melted
- 1 Egg, room temperature
- 2 tsp Lime Zest, from 1 whole lime
- 8 oz Cream Cheese, softened
- 2 ½ cups Powdered Sugar
- 2 Eggs, room temperature
- 3 oz Tequila
- 2 oz Margarita Mix
- 1 tsp Vanilla Extract
- 2 tsp Lime Zest
- ¼ cup Powdered Sugar (for garnish)
- 2 tsp Lime Zest (for garnish)
- 2 tsp Margarita Salt (for garnish)
Instructions
- Preheat the oven to 350°F (175°C). Line a 9×13 inch baking dish with parchment paper. Spray the baking dish with non-stick baking spray first, place the parchment paper on top, and spray again over the parchment paper.
- In the bowl of a stand mixer, combine all crust ingredients. Mix on medium to high speed until the mixture forms a ball.
- Press the crust batter evenly into the bottom of the prepared baking dish. Set aside.
- In a medium-sized mixing bowl, combine all filling ingredients. Use an electric mixer to mix until the filling is smooth and creamy.
- Pour the filling over the prepared crust in the baking dish. Bake for 40-45 minutes or until the edges turn light golden brown.
- Remove the baking dish from the oven and let the margarita bars cool for 1 hour. Garnish with powdered sugar, margarita salt, and additional lime zest.
