- 28–32 oz (800–900 g) frozen French fries
- 1 ½ teaspoons brown sugar
- ¼ teaspoon garlic powder
- ¼ teaspoon onion powder
- ¼ teaspoon chili powder
- ¼ teaspoon paprika
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- 4 tablespoons ranch dressing, plus more for dipping
- 2 tablespoons unsalted butter
- 2 tablespoons all-purpose flour
- ⅔ cup (160 ml) whole milk
- 2 cups (200 g) medium cheddar cheese, freshly shredded
Instructions
- Preheat the oven according to the instructions on your frozen fries’ package. Line two baking sheets with foil and coat with nonstick cooking spray.
- In a small bowl, mix together the brown sugar, garlic powder, onion powder, chili powder, paprika, salt, and black pepper.
- Spread the frozen fries in a single layer on the prepared baking sheets. Sprinkle evenly with the seasoning blend, reserving about ½ teaspoon for topping later.
- Toss the fries to coat evenly. Bake according to the package instructions, rotating trays halfway through if needed, until fries are golden and crispy.
- In a medium skillet over medium-low heat, melt the butter.
- Whisk in the flour and cook for 1–2 minutes, whisking constantly, to form a roux.
- Slowly pour in the milk, whisking until smooth and fully combined.
- Simmer until slightly thickened, then gradually stir in the shredded cheddar cheese until fully melted and smooth. If the sauce becomes too thick, add a splash more milk. Reduce heat to low to keep warm.
- Layer a quarter of the fries onto a serving plate. Spoon over ¼ of the cheese sauce. Drizzle with 1 tablespoon ranch dressing and sprinkle a pinch of the reserved seasoning on top, if desired.
- Repeat with the remaining fries, cheese sauce, and ranch for the other servings.
- Serve immediately with extra ranch, cheese sauce, or ketchup on the side for dipping.

- Freshly shredded cheese gives the best texture and flavor in the cheese sauce.
