A delicious and healthy salad combining lentils, feta cheese, and fresh parsley, perfect for a light meal or side dish.
Ingredients

- 1 cup green or brown lentils, rinsed
- 3 cups water or vegetable broth
- 1/2 cup crumbled feta cheese
- 1/2 cup cherry tomatoes, halved
- 1/4 red onion, finely chopped
- 1/4 cup chopped fresh parsley
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- Salt and black pepper, to taste
Instructions
- In a saucepan, bring the lentils and water or broth to a boil.
- Reduce the heat and simmer for 20–25 minutes until the lentils are tender but not mushy.
- Drain the lentils and let them cool.
- In a large bowl, combine the cooked lentils, feta, cherry tomatoes, red onion, and parsley.
- Drizzle with olive oil and lemon juice.
- Season with salt and black pepper to taste.
- Toss gently to combine and serve chilled or at room temperature.
Notes
- Feel free to add other vegetables such as cucumbers or bell peppers for added crunch.
- This salad can be made ahead of time and stored in the refrigerator for up to 3 days.
