Lemon Zucchini Bars with Glaze is a delightful treat that combines the moistness of zucchini with the fresh flavor of lemon, topped with a sweet glaze.


Ingredients

  • 1 teaspoon baking powder
  • ½ teaspoon baking soda

  • 2 large eggs

  • ½ cup plain yogurt or sour cream
  • 1 cup grated zucchini, lightly squeezed to remove excess moisture
  • ½ cup fresh lemon juice (from about 23 lemons)
  • 1 tablespoon lemon zest
  • 1 ½ cups powdered sugar
  • 23 tablespoons milk or lemon juice

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour an 8×8 inch baking pan.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In a large bowl, cream together softened butter and granulated sugar until light and fluffy.
  4. Beat in eggs one at a time, then stir in vanilla extract.
  5. In a small bowl, whisk together yogurt or sour cream and lemon juice.
  6. Alternately add the dry ingredients and the yogurt mixture to the wet ingredients, beginning and ending with the dry ingredients. Mix until just combined. Do not overmix.
  7. Gently fold in the grated zucchini and lemon zest.
  8. Pour batter into the prepared baking pan and spread evenly.
  9. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  10. Let the bars cool in the pan for 15-20 minutes before transferring to a wire rack to cool completely.
  11. While the bars cool, prepare the glaze: In a small bowl, whisk together powdered sugar and milk or lemon juice until smooth and pourable.
  12. Once the bars are completely cool, drizzle the glaze over the top.
  13. Let the glaze set before cutting the bars into squares.

  • Make sure to squeeze out excess moisture from the grated zucchini for the best texture.
  • The glaze can be adjusted with more milk or lemon juice depending on desired consistency.
