- For the Lemon Glaze:
- 1 cup powdered sugar
- 2 tablespoons lemon juice
Instructions
- Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
- In a bowl, mix together 2 cups of flour, baking powder, and salt.
- In another bowl, cream the butter and sugar until light.
- Beat in the eggs, lemon zest, lemon juice, and vanilla.
- Gradually combine the dry ingredients with the wet, alternating with the milk.
- Divide the batter among the muffin cups.
- In a separate bowl, combine 1/2 cup flour, granulated sugar, brown sugar, melted butter, and cinnamon to form a crumbly mixture.
- Sprinkle the crumb topping over the muffin batter.
- Bake the muffins for 20 minutes or until a toothpick comes out clean.
- Allow to cool in the tin for 5 minutes, then transfer to a wire rack.
- For the glaze, whisk together the powdered sugar and lemon juice until smooth.
- Drizzle the glaze over the cooled muffins.
