- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1/2 cup sour cream

Instructions
- Preheat Oven: Set oven to 375°F (190°C).
- Sauté Aromatics: Heat olive oil in a large skillet over medium heat. Add chopped onion and diced bell pepper, sauté for 3 to 4 minutes until softened.
- Add Garlic: Add minced garlic and cook for 1 minute until fragrant.
- Brown Ground Beef: Add ground beef to the skillet and cook, breaking up the meat with a spoon, until browned and cooked through, approximately 5 to 6 minutes. Drain excess fat if necessary.
- Season Mixture: Stir in taco seasoning, salt, pepper, and drained diced tomatoes with green chilies. Cook for 2 minutes to meld flavors.
- Add Cauliflower Rice: Add riced cauliflower to the skillet and cook for 3 to 4 minutes until just tender. Remove from heat.
- Incorporate Cheese and Sour Cream: Stir in half of the combined cheddar and Monterey Jack cheeses, and the sour cream until thoroughly combined.
- Transfer to Casserole Dish: Pour the mixture into a greased 9 by 13-inch casserole dish. Sprinkle remaining cheeses evenly over the top.
- Bake Casserole: Bake for 15 to 18 minutes, or until the cheese is melted and bubbly.
- Cool and Garnish: Let cool for 5 minutes. Garnish with green onions, cilantro, and avocado if desired. Serve hot.
