Description

Keto Taco Casserole Cheesy is a low-carb, delicious meal that combines ground beef, riced cauliflower, and cheese for a satisfying twist on traditional tacos.

Ingredients

Scale
  • 1 pound ground beef (85% lean)
  • 1 tablespoon olive oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 bell pepper (red or green), diced
  • 3 cups riced cauliflower (fresh or frozen)
  • 1 can (10 ounces) diced tomatoes with green chilies, drained
  • 2 tablespoons sugar-free taco seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup sour cream
  • Sliced green onions (optional)
  • Chopped cilantro (optional)
  • Diced avocado (optional)

Instructions

  1. Preheat Oven: Set oven to 375°F (190°C).
  2. Sauté Aromatics: Heat olive oil in a large skillet over medium heat. Add chopped onion and diced bell pepper, sauté for 3 to 4 minutes until softened.
  3. Add Garlic: Add minced garlic and cook for 1 minute until fragrant.
  4. Brown Ground Beef: Add ground beef to the skillet and cook, breaking up the meat with a spoon, until browned and cooked through, approximately 5 to 6 minutes. Drain excess fat if necessary.
  5. Season Mixture: Stir in taco seasoning, salt, pepper, and drained diced tomatoes with green chilies. Cook for 2 minutes to meld flavors.
  6. Add Cauliflower Rice: Add riced cauliflower to the skillet and cook for 3 to 4 minutes until just tender. Remove from heat.
  7. Incorporate Cheese and Sour Cream: Stir in half of the combined cheddar and Monterey Jack cheeses, and the sour cream until thoroughly combined.
  8. Transfer to Casserole Dish: Pour the mixture into a greased 9 by 13-inch casserole dish. Sprinkle remaining cheeses evenly over the top.
  9. Bake Casserole: Bake for 15 to 18 minutes, or until the cheese is melted and bubbly.
  10. Cool and Garnish: Let cool for 5 minutes. Garnish with green onions, cilantro, and avocado if desired. Serve hot.
