- 1 lb ground pork sausage, sugar-free and keto-friendly
- 5 oz fresh spinach, roughly chopped
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 1 cup shredded cheddar cheese
- 1/4 cup heavy cream
- 10 large eggs
- 1 tablespoon olive oil
- Butter or nonstick spray for greasing
- 1/2 teaspoon sea salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon smoked paprika, optional
Instructions
- Preheat oven to 350°F. Grease a 9×13 inch baking dish with butter or nonstick spray.
- Heat olive oil in a large skillet over medium heat. Add diced onion and minced garlic; sauté for 2 to 3 minutes until softened.
- Add ground pork sausage, breaking it apart with a spatula. Cook for 5 to 7 minutes until browned and cooked through.
- Stir in chopped spinach and cook for 1 to 2 minutes until wilted. Remove from heat and let cool slightly.
- In a large mixing bowl, whisk together eggs, heavy cream, sea salt, black pepper, and smoked paprika if using.
- Stir the sausage-spinach mixture into the eggs, then fold in shredded cheddar cheese until evenly distributed.
- Pour the combined mixture into the prepared baking dish and spread evenly.
- Bake for 30 to 35 minutes, or until the center is set and the top is lightly golden.
- Let cool for 5 minutes before slicing. Serve warm, or cool completely and refrigerate for meal prep.

- For a spicier kick, consider adding diced jalapeños or crushed red pepper flakes.
