Description

A healthy and refreshing Keto Greek Cauliflower Rice recipe that combines the goodness of cauliflower with fresh vegetables and feta cheese.


Ingredients

Scale
  • 10 ounces Cauliflower Rice (frozen)
  • 1/2 Cucumber (chopped, approximately 1 cup)
  • 1/4 cup Tomato (chopped)
  • 1/3 cup Red Onion (chopped)
  • 1/4 cup Feta Cheese (crumbled)
  • 1 Lemon (juiced)
  • 2 tbsp Olive Oil
  • 1/2 tsp Dry Dill
  • 1/2 tsp Garlic Powder

Instructions

  1. Prepare the cauliflower rice, per bagged instructions. Set aside.
  2. Chop cucumber, tomato and red onion.
  3. In a large bowl, combine rice with chopped ingredients and crumbled feta.
  4. Stir in olive oil, the juice of 1 lemon, dill and garlic powder. Stir well, so all ingredients are well coated.
  5. Top with a dash of salt & pepper, if desired. You can serve this warm or cold.

Notes

  • Best served fresh but can be stored in the refrigerator for a day.
  • Add more feta for a creamier texture if desired.
  • Adjust seasoning according to taste.
