Description
A healthy and refreshing Keto Greek Cauliflower Rice recipe that combines the goodness of cauliflower with fresh vegetables and feta cheese.
Ingredients

- 10 ounces Cauliflower Rice (frozen)
- 1/2 Cucumber (chopped, approximately 1 cup)
- 1/4 cup Tomato (chopped)
- 1/3 cup Red Onion (chopped)
- 1/4 cup Feta Cheese (crumbled)
- 1 Lemon (juiced)
- 2 tbsp Olive Oil
- 1/2 tsp Dry Dill
- 1/2 tsp Garlic Powder
Instructions
- Prepare the cauliflower rice, per bagged instructions. Set aside.
- Chop cucumber, tomato and red onion.
- In a large bowl, combine rice with chopped ingredients and crumbled feta.
- Stir in olive oil, the juice of 1 lemon, dill and garlic powder. Stir well, so all ingredients are well coated.
- Top with a dash of salt & pepper, if desired. You can serve this warm or cold.
Notes
- Best served fresh but can be stored in the refrigerator for a day.
- Add more feta for a creamier texture if desired.
- Adjust seasoning according to taste.
