Description

Delicious Keto Bacon Cheese Mushrooms that are easy to prepare and perfect for gatherings.


Ingredients

  • 16 large white or cremini mushrooms, stems removed and reserved
  • 4 slices bacon, finely chopped
  • 1/2 cup cream cheese, softened
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, finely chopped
  • 2 garlic cloves, minced
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon smoked paprika
  • Fresh parsley, finely chopped (for garnish)

Instructions

  1. Preheat oven to 375°F and line a baking sheet with parchment paper.
  2. Clean mushroom caps and finely chop the reserved stems.
  3. Cook the chopped bacon in a skillet over medium heat until crispy, then remove and drain on paper towels.
  4. Add chopped mushroom stems and minced garlic to the skillet and sauté for 2 to 3 minutes until softened, then let cool slightly.
  5. In a medium bowl, mix cream cheese, cheddar cheese, Parmesan, sautéed mushroom mixture, cooked bacon, parsley, black pepper, and smoked paprika.
  6. Spoon the filling generously into each mushroom cap and arrange on the prepared baking sheet.
  7. Sprinkle reserved bacon bits over the top.
  8. Bake for 20 to 25 minutes or until the mushrooms are tender and the tops are golden brown.
  9. Garnish with extra chopped parsley and serve warm.
