Description

Jalapeno Cornbread Whoopie Pies are a unique and spicy take on traditional whoopie pies, featuring a cornbread base filled with a savory bacon and goat cheese filling.


Ingredients

  • 160 grams all-purpose flour
  • 150 grams fine cornmeal
  • 55 grams brown sugar, packed
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 240 millilitres buttermilk
  • 57 grams unsalted butter, softened
  • 1 large egg
  • 2 jalapeno peppers, seeds removed and finely diced
  • 6 slices streaky bacon, cooked crisp and roughly chopped
  • 115 grams goat cheese, slightly softened
  • 115 grams cream cheese, softened
  • 30 millilitres whole milk
  • 1 tablespoon fresh chives, finely chopped

Instructions

  1. Preheat oven to 190°C. Line a baking tray with parchment paper and lightly coat with non-stick spray.
  2. In a large mixing bowl, whisk together flour, cornmeal, brown sugar, baking powder, and salt until thoroughly combined.
  3. Add buttermilk, softened butter, and egg to the dry mixture. Stir gently just until incorporated; do not overmix.
  4. Carefully fold in finely diced jalapeno peppers to evenly distribute throughout the batter.
  5. Spoon rounded tablespoons of batter onto the prepared tray, spacing 4 centimetres apart. Bake in the preheated oven for 12 to 15 minutes or until edges are lightly golden and centres spring back when touched.
  6. Leave on the tray for 3 to 5 minutes, then transfer to a wire rack and cool completely before assembling.
  7. In a medium bowl, combine goat cheese, cream cheese, and milk. Mix until smooth and creamy.
  8. Fold in chopped bacon and chives until evenly distributed throughout the filling.
  9. Spread or pipe approximately 1 tablespoon of filling onto the flat side of half the cooled cornbread rounds. Top each with a remaining round to form sandwiches.

Notes

  • For an extra kick, consider leaving some seeds in the jalapenos.
  • These pies are best served fresh, but can be stored in the refrigerator for a few days.
  • Feel free to substitute bacon with a vegetarian alternative if desired.
