Description

A creamy and delightful Italian dish featuring chicken and tortellini in a rich cheese sauce.


Ingredients

  • 34 boneless skinless chicken breasts, diced
  • 1 cup Italian dressing
  • 1/2 tablespoon onion powder
  • 1/2 tablespoon garlic powder
  • 1/4 teaspoon black pepper
  • 12 ounces tortellini pasta
  • 1 tablespoon olive oil
  • 3 tablespoons butter
  • 1 cup shredded Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 2 cups heavy whipping cream
  • 2 tablespoons all-purpose flour
  • Salt and black pepper to taste

Instructions

  1. Add diced chicken to a large bowl and mix with Italian dressing, onion powder, garlic powder, and black pepper. Allow to marinate for at least 15 minutes.
  2. Bring a large pot of water to boil. Cook the tortellini according to package instructions. Drain and drizzle a little olive oil on the pasta to prevent sticking.
  3. In a large skillet over medium-high heat, add olive oil and cook the chicken pieces until the internal temperature reaches 165°F (74°C). Remove from the skillet.
  4. Reduce skillet heat to medium and add butter. Once melted, whisk in all-purpose flour and cook for 1-2 minutes. Gradually add heavy whipping cream while whisking until the sauce thickens and begins to simmer. Stir in Parmesan and mozzarella cheeses until combined into a thick, cheesy sauce. Season with salt and black pepper.
  5. Add the cooked chicken and tortellini to the cheese sauce in the skillet. Stir to combine, then serve and enjoy.
