A delicious and easy recipe for Hot Honey Beef & Sweet Potato Boats that combines savory beef and sweet potatoes topped with cottage cheese and a drizzle of hot honey.
Ingredients

- 2 small sweet potatoes
- 1/2 lb ground beef (or turkey)
- 1/2 tsp salt
- 1/2 tsp smoked paprika (or chili powder)
- 2/3 cup cottage cheese
- 1/2 avocado, sliced
- 2–3 tsp hot honey (or honey + chili flakes)
- Black pepper
Instructions
- Bake sweet potatoes at 400°F for 40–50 min, or microwave until soft.
- Brown beef in a pan with salt and paprika. Break it up as it cooks.
- Split each potato. Fluff the inside with a fork. Add a pinch of salt and pepper.
- Spoon beef on top. Add a big scoop of cottage cheese.
- Add avocado slices. Drizzle hot honey.
- Optional side: Toss cucumber with vinegar, salt, oil, pepper, and sesame.
Notes
- This dish can be made with turkey as a leaner alternative to beef.
- Adding crushed red pepper flakes can increase the heat.
