Description

A delicious and easy recipe for Hot Honey Beef & Sweet Potato Boats that combines savory beef and sweet potatoes topped with cottage cheese and a drizzle of hot honey.


Ingredients

Scale
  • 2 small sweet potatoes
  • 1/2 lb ground beef (or turkey)
  • 1/2 tsp salt
  • 1/2 tsp smoked paprika (or chili powder)
  • 2/3 cup cottage cheese
  • 1/2 avocado, sliced
  • 23 tsp hot honey (or honey + chili flakes)
  • Black pepper

Instructions

  1. Bake sweet potatoes at 400°F for 40–50 min, or microwave until soft.
  2. Brown beef in a pan with salt and paprika. Break it up as it cooks.
  3. Split each potato. Fluff the inside with a fork. Add a pinch of salt and pepper.
  4. Spoon beef on top. Add a big scoop of cottage cheese.
  5. Add avocado slices. Drizzle hot honey.
  6. Optional side: Toss cucumber with vinegar, salt, oil, pepper, and sesame.

Notes

  • This dish can be made with turkey as a leaner alternative to beef.
  • Adding crushed red pepper flakes can increase the heat.
