Description

Honey Feta Watermelon Salad is a refreshing and colorful dish that combines juicy watermelon, tangy feta cheese, and sweet pomegranate seeds, topped with a light honey-lime dressing.

Ingredients

Scale
  • 4 cups seedless watermelon, cut into bite-sized cubes
  • 1/2 cup pomegranate seeds (arils)
  • 3/4 cup feta cheese, crumbled
  • 1/4 cup fresh mint leaves, chopped
  • 2 tablespoons honey
  • 1 tablespoon fresh lime juice
  • 1 tablespoon extra virgin olive oil
  • Pinch of salt
  • Freshly ground black pepper, to taste
  • Zest of 1 lime (optional)
  • Additional mint leaves for serving (optional)

Instructions

  1. In a large mixing bowl, combine the watermelon cubes, pomegranate seeds, crumbled feta, and chopped mint leaves.
  2. In a small bowl, whisk together honey, fresh lime juice, olive oil, salt, and black pepper until well combined.
  3. Drizzle the dressing over the salad ingredients and gently toss to coat evenly.
  4. Transfer to a serving platter. Garnish with lime zest and extra mint leaves if desired.
  5. Serve immediately for best texture and flavor.

Notes

  • Best served fresh to retain the texture of watermelon.
  • Can be made ahead, but dress just before serving to prevent the salad from getting soggy.
  • Feel free to add other fruits such as cantaloupe or berries for variation.
