- 1 large egg
- 2 tablespoons melted butter (or coconut oil)
- 1 cup apples, peeled and diced (Granny Smith or Honeycrisp)
- 1 teaspoon lemon juice
- 1/2 cup maple syrup
- 1 teaspoon vanilla extract
Instructions
- Peel and dice the apples, then toss with lemon juice to prevent browning.
- In a large bowl, whisk together flour, brown sugar, baking powder, cinnamon, nutmeg, and salt until combined.
- In a separate bowl, beat the milk, egg, and melted butter until smooth.
- Pour the wet ingredients into the dry ingredients and stir gently until just combined. Fold in the diced apples without overmixing.
- Heat a lightly greased skillet over medium heat. Pour 1/4 cup batter per pancake. Cook until bubbles appear on the surface, then flip and cook until golden brown on the other side.
- Warm the maple syrup and vanilla extract together in a small saucepan over low heat.
- Stack pancakes on a plate, drizzle with the warm vanilla maple syrup, and serve immediately.
