Description

Delicious homemade Almond Joys made with a blend of fresh ingredients and topped with a warm vanilla maple syrup.


Ingredients

  • 1 large egg
  • 2 tablespoons melted butter (or coconut oil)
  • 1 cup apples, peeled and diced (Granny Smith or Honeycrisp)
  • 1 teaspoon lemon juice
  • 1/2 cup maple syrup
  • 1 teaspoon vanilla extract

Instructions

  1. Peel and dice the apples, then toss with lemon juice to prevent browning.
  2. In a large bowl, whisk together flour, brown sugar, baking powder, cinnamon, nutmeg, and salt until combined.
  3. In a separate bowl, beat the milk, egg, and melted butter until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir gently until just combined. Fold in the diced apples without overmixing.
  5. Heat a lightly greased skillet over medium heat. Pour 1/4 cup batter per pancake. Cook until bubbles appear on the surface, then flip and cook until golden brown on the other side.
  6. Warm the maple syrup and vanilla extract together in a small saucepan over low heat.
  7. Stack pancakes on a plate, drizzle with the warm vanilla maple syrup, and serve immediately.
