Description

A refreshing and healthy twist on a classic Italian salad featuring broccoli, garlic, and a tangy lemon dressing.

Ingredients

Scale
  • 1 head of broccoli (trim off the bottom 2 inches, break the rest into small florets)
  • 1 tablespoon grated lemon peel
  • 5 cloves minced garlic
  • 1/2 cup (120g) extra virgin olive oil
  • 1/4 cup (60g) fresh lemon juice
  • 1/4 teaspoon hot red pepper flakes
  • 1 teaspoon dijon mustard

Instructions

  1. Start by bringing a large pot of water to a boil.
  2. Once the water is boiling, add the broccoli.
  3. Cook the broccoli until it is almost tender, which should take about 5-6 minutes.
  4. Once cooked, drain the broccoli but do not rinse it with cool water.
  5. Allow it to stay warm, which will help it absorb the dressing better.
  6. While the broccoli is cooking, begin preparing the dressing by whisking together your dressing ingredients until they are well emulsified.
  7. In a large bowl, toss the warm, drained broccoli with the freshly prepared dressing and lemon zest until the broccoli is well-coated.
  8. Taste test your broccoli salad and season with salt as needed.
  9. If you desire a bit more tang, add more lemon juice.
  10. For added heat, consider incorporating hot pepper flakes to taste.
  11. Once the broccoli is combined with the dressing, let the salad sit in the refrigerator for at least 1 hour to allow the flavors to meld.
  12. For a more robust flavor, refrigerate overnight if possible.
  13. Serve and enjoy your flavorful broccoli salad!

Notes

  • For best flavor, use fresh ingredients.
  • This salad can be made a day ahead for enhanced taste.
  • Adjust the spicy heat to your preference by varying the amount of hot red pepper flakes.
