  • 1 lb ground turkey
  • 2 medium zucchinis
  • 1 tablespoon olive oil
  • 1⁄2 medium onion
  • 2 cloves garlic
  • 1⁄2 teaspoon dried oregano
  • 1⁄2 teaspoon paprika
  • 1⁄4 teaspoon red pepper flakes
  • 1⁄2 teaspoon salt
  • 1⁄4 teaspoon black pepper
  • 1⁄4 cup chicken broth
  • 1⁄2 cup shredded mozzarella cheese

Instructions

  1. Heat a large skillet over medium heat.
  2. Add the olive oil to the skillet, swirling it to coat the bottom.
  3. Once the oil is hot, add the ground turkey to the skillet.
  4. Break up the ground turkey with a wooden spoon or spatula as it cooks.
  5. Cook the turkey for about 5-7 minutes, stirring occasionally, until it is fully browned and no longer pink.
  6. Chop the onion into small pieces while the turkey cooks.
  7. Peel and mince the garlic cloves.
  8. Slice the zucchinis in half lengthwise, then slice each half into half-moon shapes.
  9. Once the turkey is cooked through, add the chopped onion to the skillet.
  10. Stir the onion into the turkey and cook for about 3-4 minutes, until it becomes soft and translucent.
  11. Add the minced garlic to the skillet, stirring it in for about 30 seconds, or until fragrant.
  12. Sprinkle the dried oregano, paprika, red pepper flakes, salt, and black pepper over the turkey mixture.
  13. Stir well to evenly distribute the spices throughout the skillet.
  14. Add the sliced zucchini to the skillet, stirring to combine with the turkey and onion mixture.
  15. Pour the chicken broth into the skillet, stirring to incorporate.
  16. Cover the skillet and cook for 7-10 minutes, or until the zucchini is tender and has released its moisture.
  17. Once the zucchini is cooked, remove the lid and stir the mixture to redistribute the vegetables.
  18. Sprinkle the shredded mozzarella cheese evenly over the top of the turkey and zucchini mixture.
  19. Cover the skillet again and cook for an additional 2-3 minutes, or until the cheese is melted and bubbly.
  20. Once the cheese has melted, remove the skillet from the heat.
  21. Serve the Ground Turkey and Zucchini Skillet immediately, either on its own or with your preferred side.
