Ingredients

  • 1 cup broccoli florets

  • 1 carrot, julienned
  • 4 green onions, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1/4 cup soy sauce (low-sodium recommended)
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon rice vinegar
  • 1 tablespoon cornstarch mixed with 2 tablespoons water
  • Sesame seeds, for garnish
  • Cooked rice or noodles, for serving

Instructions

  1. In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the ground turkey and cook until browned, breaking it apart with a spatula, about 5-7 minutes.
  2. Stir in the minced garlic and ginger, cooking for an additional 1-2 minutes until fragrant. Next, add the broccoli, bell pepper, and carrot. Sauté for about 5 minutes, until the vegetables are tender but still slightly crisp.
  3. In a small bowl, whisk together the soy sauce, honey (or maple syrup), and rice vinegar until well combined. Pour the sauce into the skillet with the turkey and vegetables.
  4. Bring the mixture to a gentle simmer and stir in the cornstarch slurry (cornstarch mixed with water). Allow the sauce to thicken, cooking for an additional 2-3 minutes. Adjust seasoning if necessary.
  5. Stir in the chopped green onions and cook for 1 more minute. Remove from heat and serve the stir fry over cooked rice or noodles. Garnish with sesame seeds for an extra crunch.

Notes

  • For a spicier version, add red pepper flakes to the stir fry.
