- 1 lb ground turkey
- 2 tablespoons vegetable oil
- 1 cup broccoli florets
- 1 bell pepper, thinly sliced (any color)
- 1 carrot, julienned
- 4 green onions, chopped
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- 1/4 cup soy sauce (low-sodium recommended)
- 2 tablespoons honey or maple syrup
- 1 tablespoon rice vinegar
- 1 tablespoon cornstarch mixed with 2 tablespoons water
- Sesame seeds, for garnish
- Cooked rice or noodles, for serving
Instructions
- In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the ground turkey and cook until browned, breaking it apart with a spatula, about 5-7 minutes.
- Stir in the minced garlic and ginger, cooking for an additional 1-2 minutes until fragrant. Next, add the broccoli, bell pepper, and carrot. Sauté for about 5 minutes, until the vegetables are tender but still slightly crisp.
- In a small bowl, whisk together the soy sauce, honey (or maple syrup), and rice vinegar until well combined. Pour the sauce into the skillet with the turkey and vegetables.
- Bring the mixture to a gentle simmer and stir in the cornstarch slurry (cornstarch mixed with water). Allow the sauce to thicken, cooking for an additional 2-3 minutes. Adjust seasoning if necessary.
- Stir in the chopped green onions and cook for 1 more minute. Remove from heat and serve the stir fry over cooked rice or noodles. Garnish with sesame seeds for an extra crunch.
Notes
- For a spicier version, add red pepper flakes to the stir fry.
- This dish can be made gluten-free by using gluten-free soy sauce.
