Ingredients

  • 4 medium zucchinis, halved lengthwise and scooped out
  • 1 pound ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup tomato sauce
  • 1 cup shredded cheese (mozzarella, cheddar, or parmesan)
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • ½ teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice the zucchinis in half lengthwise and scoop out the center to create boats.
  3. Brush zucchini halves with olive oil and place on a baking sheet.
  4. Pre-bake zucchini for 5-7 minutes to soften.
  5. In a skillet, heat olive oil and sauté diced onion until translucent.
  6. Add minced garlic and cook for 30 seconds.
  7. Stir in ground beef and cook until browned, breaking it apart.
  8. Drain excess fat and mix in tomato sauce, Italian seasoning, paprika, salt, and pepper.
