Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • Juice of 1 lime
  • 1 large ripe mango, peeled, pitted, and diced
  • 1 ripe avocado, diced
  • 1/2 small red onion, finely chopped
  • 1/2 red bell pepper, diced
  • 1 small jalapeño, seeded and finely chopped (optional)
  • 2 tablespoons fresh cilantro, chopped
  • Juice of 1 lime
  • Salt and pepper to taste

Instructions

  1. Preheat grill to medium-high heat, approximately 400°F.
  2. In a small bowl, combine olive oil, smoked paprika, cumin, garlic powder, salt, pepper, and lime juice. Mix thoroughly.
  3. Place chicken breasts in a shallow dish or resealable bag. Pour marinade over chicken, ensuring complete coverage. Allow to marinate for at least 15 minutes.
  4. In a medium bowl, combine mango, avocado, red onion, bell pepper, jalapeño if using, cilantro, lime juice, salt, and pepper. Gently toss to combine. Set aside.
  5. Grill chicken for 6 to 7 minutes per side until fully cooked, with an internal temperature reaching 165°F.
  6. Remove chicken from grill and allow to rest for 5 minutes before slicing.
  7. Slice chicken and top generously with mango avocado salsa. Serve immediately.
