- 1 large cucumber, cut into thick half-moon slices
- 6 oz feta cheese, cut into small cubes
- 1 cup cherry tomatoes
- ½ cup Kalamata olives, pitted
- Fresh dill or parsley for garnish
- For the Lemon-Olive Oil Drizzle:
- 2 tbsp olive oil
- 1 tsp lemon juice
- ½ tsp dried oregano
- Black pepper to taste
Instructions
- Cut the cucumber and feta cheese into bite-sized pieces.
- On each toothpick or mini skewer, layer: cucumber slice, feta cube, cherry tomato, and Kalamata olive.
- Place all assembled skewers onto a serving platter.
- Whisk olive oil, lemon juice, dried oregano, and black pepper in a small bowl.
- Lightly drizzle the lemon-olive oil mixture over the skewers.
- Sprinkle chopped dill or parsley on top.
- Serve immediately as a refreshing appetizer or part of a mezze platter.
