Description

An easy and delightful recipe for Greek Feta & Cucumber Bite Skewers that are perfect for entertaining guests.


Ingredients

  • 1 large cucumber, cut into thick half-moon slices
  • 6 oz feta cheese, cut into small cubes
  • 1 cup cherry tomatoes
  • ½ cup Kalamata olives, pitted
  • Fresh dill or parsley for garnish
  • For the Lemon-Olive Oil Drizzle:
  • 2 tbsp olive oil
  • 1 tsp lemon juice
  • ½ tsp dried oregano
  • Black pepper to taste

Instructions

  1. Cut the cucumber and feta cheese into bite-sized pieces.
  2. On each toothpick or mini skewer, layer: cucumber slice, feta cube, cherry tomato, and Kalamata olive.
  3. Place all assembled skewers onto a serving platter.
  4. Whisk olive oil, lemon juice, dried oregano, and black pepper in a small bowl.
  5. Lightly drizzle the lemon-olive oil mixture over the skewers.
  6. Sprinkle chopped dill or parsley on top.
  7. Serve immediately as a refreshing appetizer or part of a mezze platter.
