Description

Deliciously gooey cookies filled with fresh raspberries and rich dark chocolate chunks.

Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 2 tsp vanilla extract
  • 3 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup fresh raspberries, mashed
  • 1 1/2 cups dark chocolate chunks

Instructions

  1. Preheat oven to 375°F (190°C) and line baking sheets with parchment paper.
  2. In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in eggs one at a time, then stir in vanilla extract and mashed raspberries.
  4. In a separate bowl, whisk together flour, baking soda, and salt. Gradually add to the wet ingredients, mixing until just combined.
  5. Fold in chocolate chunks. Drop rounded tablespoons of dough onto prepared baking sheets, spacing 2 inches apart.
  6. Bake for 10-12 minutes until edges are golden but centers are still soft. Let cool on baking sheets for 5 minutes before transferring to wire racks.

Notes

  • For an extra burst of flavor, you can add a pinch of sea salt on top before baking.
  • Ensure fresh raspberries are properly mashed to combine well with the dough.
