- 500 grams sugar cookie mix
- 96 grams instant butterscotch pudding mix
- 115 grams unsalted butter, softened
- 1 large egg
- 397 grams caramels, unwrapped
- 120 millilitres evaporated milk
- 240 grams mixed nuts, coarsely chopped
- 5 millilitres pure vanilla extract
- 170 grams butterscotch chips
Instructions
- Preheat oven to 175°C. Lightly coat a 23 x 33-centimetre baking pan with non-stick spray and set aside.
- In a medium bowl, blend together sugar cookie mix, instant butterscotch pudding mix, softened butter, and egg until fully incorporated.
- Press mixture evenly into prepared pan. Bake on centre rack for 20 minutes.
- In a large saucepan over medium heat, combine unwrapped caramels and evaporated milk. Stir continuously until mixture is smooth and fully melted.
- Remove caramel mixture from heat and immediately stir in mixed nuts and vanilla extract.
- Pour caramel nut filling evenly over baked crust. Distribute butterscotch chips uniformly across the surface.
- Allow bars to cool in the pan until fully set before slicing into individual portions.
Notes
- Ensure that the caramels are unwrapped before melting.
- For a softer bar, bake for a slightly shorter time.
- Store leftovers in an airtight container at room temperature.
