Description

Gooey Butterscotch Nut Bars are a delicious dessert combining a sweet and buttery base with a rich caramel and nut filling, topped with butterscotch chips.


Ingredients

  • 500 grams sugar cookie mix
  • 96 grams instant butterscotch pudding mix
  • 115 grams unsalted butter, softened
  • 1 large egg
  • 397 grams caramels, unwrapped
  • 120 millilitres evaporated milk
  • 240 grams mixed nuts, coarsely chopped
  • 5 millilitres pure vanilla extract
  • 170 grams butterscotch chips

Instructions

  1. Preheat oven to 175°C. Lightly coat a 23 x 33-centimetre baking pan with non-stick spray and set aside.
  2. In a medium bowl, blend together sugar cookie mix, instant butterscotch pudding mix, softened butter, and egg until fully incorporated.
  3. Press mixture evenly into prepared pan. Bake on centre rack for 20 minutes.
  4. In a large saucepan over medium heat, combine unwrapped caramels and evaporated milk. Stir continuously until mixture is smooth and fully melted.
  5. Remove caramel mixture from heat and immediately stir in mixed nuts and vanilla extract.
  6. Pour caramel nut filling evenly over baked crust. Distribute butterscotch chips uniformly across the surface.
  7. Allow bars to cool in the pan until fully set before slicing into individual portions.

  • For a softer bar, bake for a slightly shorter time.
